The vintage, which starts in mid-August with white grapes and ends in October with Öküzgözü, is based on sensory and chemical analysis. The grapes are hand-picked carefully to prevent damage and cooled overnight in cold cellars to reach the appropriate processing temperature, making them ready for production.
